Pineapple Ginger Cooler
The pineapple ginger cooler for the hottest week of the year
Some drinks are built for a heatwave and nothing else, and this pineapple ginger cooler recipe is one of them. Fresh pineapple juice, a squeeze of lime, plenty of ice, and a splash of Gem Juice Original. No blender, no simple syrup, just a handful of ingredients doing the work. It tastes tropical without tipping into a sugary poolside cliché, because the ginger keeps every sip honest.
Why a pineapple ginger cooler actually works
Pineapple is sweet enough on its own that most recipes lean into it and stop there. Gem Juice Original doesn't let that happen. Real ginger juice with a genuine bite cuts straight through the sweetness, so the glass reads bright and tropical rather than syrupy. A little goes a long way, which is why one splash is enough for a full glass. Lime pulls it tighter still, sharpening the edges. The result is a cooler that feels grown-up: refreshing on a hot terrace, but never cloying.
What you need
- 3 cl Gem Juice Original (a splash)
- 150ml fresh pineapple juice
- Juice of half a lime
- Sparkling water, to top
- Plenty of ice
- A pineapple wedge and a sprig of mint, for garnish
How to make it
- Fill a tall glass with ice.
- Pour in the fresh pineapple juice.
- Squeeze in the lime juice.
- Add the Gem Juice Original and stir once, slowly, from the bottom up.
- Top with sparkling water, then garnish with a pineapple wedge on the rim and a sprig of mint.
Tip: This is a mid-afternoon drink, the one you make when the heat has made the day slow down anyway. Serving a crowd? Build each glass individually rather than mixing a jug: the ice dilutes faster in pineapple juice than people expect, and a jug sitting out goes flat and watery before the second round.
