Mint Ginger Matcha

The ginger matcha that actually tastes like something

Most matcha drinks taste like green tea trying to be interesting. This ginger matcha has an actual reason to exist: Gem Juice Mint underneath the whisked matcha, so every sip carries real ginger heat instead of just grass and sweetener. It is cold, it is layered, and it looks like more effort than it is.


Why mint and ginger cut through the matcha

Matcha on its own can sit heavy, all grass and bitterness with nothing to lift it. Gem Juice Mint brings the opposite: sharp ginger heat and a cool mint edge that cuts straight through that weight. The result drinks clean and bright instead of thick, closer to a proper iced drink than a green smoothie.

A little Gem Juice Mint goes a long way here, so it never fights the matcha for attention. It just makes the whole glass more interesting.


What you need

  • 1 tsp matcha powder
  • 60ml hot water, just off the boil
  • 3 cl Gem Juice Mint (a splash)
  • Ice
  • Milk or oat milk, optional
  • A sprig of fresh mint

How to make it

  1. Sift the matcha powder into a small bowl to break up any clumps.
  2. Add the hot water and whisk briskly in a zigzag motion until frothy.
  3. Fill a tall glass with ice.
  4. Pour in the Gem Juice Mint and the milk, if using, letting it settle around the ice.
  5. Slowly pour the whisked matcha over the back of a spoon so it sits on top rather than mixing straight in.
  6. Finish with a sprig of fresh mint and serve right away, while the layers are still visible.

Tip: Stir it or don't. Left alone, you get matcha first and ginger-mint after; stirred once, it drinks like one thing. Either way, this is the one to make on a late-summer afternoon when it is too warm outside for a hot cup of tea.
